Spicy Chicken "Pita" Paninis
Ingredients
(6) 4oz. chicken breasts
6 tsp sriracha hot sauce
6 pitas
1 1/2 cups monterey jack cheese, shredded
1-2 crispin apples, depending on size
1 garlic clove, minced
3T soft butter
1 tsp kosher salt
1 tsp black pepper, fresh ground
Directions
1) In a large bowl, toss the chicken breasts and sriracha hot sauce
2) Pound the chicken breast thin and uniform, about half the size of the pita
3) Lay out the pita rounds and sprinkle cheese on half of each pita, using only half of the cheese
4) Place apple slices on top of the cheese, then place a piece of chicken on top of the apples. Top each piece of chicken with remaining cheese.
5) In a small bowl, mix the garlic, butter, salt, and pepper. Fold the pitas in half and spread each pita with garlic butter.
6) Cook in a panini grill for 5-7 minutes. Allow to cool 1-2 minutes.
